Achiote Paste is made with a blend of annatto seeds, spices, herbs and vinegar. It is especially used in the Oaxaca and Yucatan regions to marinate meats, poultry, fish and game. On its own, this bright ruby, soft paste is quite bitter and strong, but if you mix it with orange juice and cider vinegar, it makes an amazing marinade of subtle tangy flavors. This particular brand of Achiote Paste is also gluten free, so suitable for Coeliacs. We love it as the main ingredient for the super delicious Cochinita Pibil.
