Cochinita Pibil is considered the most representative dish of Yucatecan cuisine.

The state of Yucatán is home to a rich and traditional gastronomy, influenced by the Mayans, that mixes key ingredients such as corn, tomato, and beans. The recipes also include unique to the states products such as habanero chili, sour orange, and the popular Achiote that gives color and flavor to many meals.

Cochinita Pibil finds its origins in pre-Hispanic times and is usually served in tacos, tortas (sandwich), or by itself. Traditionally it's accompanied with pickled red onions, sometimes they are complemented by habanero chilies to delightfully spice it up a little. This topping is called "Ixnipec".

Cochinita Pibil has a slightly acidic taste because of the sour orange juice. The meat has a divine peppery aroma with the achiote (annatto) presenting a subtle flavor that has been described as nutty, sweet, and earthy. The with locally seasoned spices, marinated meat is slowly cooked in the oven, to ensure a spectacular tasting, juicy end product you will enjoy.
