Pasilla is a dry Chile. It has a spicy flavor. It has got its name because it looks wrinkled like raisins. Fresh it's called Chile Chilaca. It is used to make a number of sauces, in different types of moles, marinades and accompanying different stews of beef, pork or chicken. It can be cut into slices, fried and is the classic garnish of the tortilla soup eaten in the Capital of Mexico.
Ingredients: Dried whole pasilla chili. Keep in a cool dry place.
